Chopped pancake with caramelised apples (Schmarrn mit karamellisierten Äpfeln)

Ingredients: (serves 4)

  • 2 cooking apples (220g each)
  • 2 desert spoons of lemon juice
  • 5 eggs
  • 200g sieved flour
  • 200ml milk
  • 100g sugar
  • 60g butter1 pinch of salt
  • 1-2 desert spoons of Calvados

Method:

Peel, quarter, core and roughly chop 2 apples and cover with lemon juice. Separate the of eggs. Whisk the egg yolks with the flour and milk. Whisk the egg whites with 50g sugar and a pinch of salt until forming peaks. Fold into the batter.

Melt 20g butter in a pan and fry half of the apples for a minute. Add the batter to the apples first and then add the remaining apples. Cook for 2–3 minutes on a medium heat and then bake in the middle of an oven preheated to 200°C for 10–15 minutes.

Melt 40g of butter in another pan. Carefully pull the pancake apart using two forks. Add 50g of sugar and brown the pieces of pancake in the melted butter turning continuously until caramelised. Add 1–2 desert spoons of Calvados to taste.
